There’s little I enjoy more than a good salad. And a good salad always includes some type of cheese sprinkled on top. The other day I found this recipe for a salad that included roasted cherry tomatoes, endives, and gorgonzola cheese. Because I only had goat cheese at home, I substituted that in for the gorgonzola, left out the endives, and I had myself a very simple but tasty summer salad!


We paired it off with potato salad and grilled tilapia topped with a mango, onion, and tomato relish. A perfect light, summer meal!
